Looking today at the Coppermine configuration and noticed that it uses the ImageMagik library to convert the images for preview. The library comes with some utililities such as the convert used by Coppermine. I tried the following

convert original.jpeg -resize 300×300 resized.jpeg

and I got a pretty good 300 per 300 pixel photo of the original.
